This recipe is so simple but tastes complex.
You will need:
- Fresh Garden Tomatoes, enough to cover a 9x13" baking dish
- Garlic Cloves, 2 still in their paper
- Olive Oil, Roughly 2-3 Tablespoons
- Water, 1/2 cup
- Salt, Roughly 3 teaspoons
- Basil, 1 Tablespoon
- Heat the oven to 400 degrees. Gather your garden tomatoes. Wash and put into your baking dish. Drizzle with olive oil and sprinkle with salt. No measuring here. Harness the little Italian grandmother within. (We all have one....Italian or not!)
- Bake for 45-60 minutes or until they look like this:
3. Put your garlic cloves, still in the paper in the oven too!
4. Once properly wrinkled, take out of the oven. Wait until garlic is cool enough to touch and squeeze out of the paper.
5. Add tomatoes, roasted garlic and water to blender and blend until smooth.
6. Put onto the stove and let it reduce for 10 minutes. Add chopped basil and salt to taste
Serve over your favorite pasta. A nice, light summer tomato treat that even your children will love!
